Ingredients

  • 250g of red lentils rinsed
  • 400ml coconut milk
  • 1 red pepper chopped
  • 2 tomatoes chopped
  • 1 tsp Coriander powder
  • Juice of 1 lime
  • 1 tsp Turmeric
  • 2 green chillies sliced
  • 2 tsp black mustard seeds
  • 2 onions  – one finely chopped,  one sliced

 Directions

  1. Put the lentils, coconut  milk, chopped onion, tomatoes, chillies and turmeric in a pan and add 300ml water, season and simmer for 20 minutes until lentils are tender
  2. Fry the sliced onion in 4 tbsp olive oil until crisp, add the coriander and mustard seeds and heat further
  3. Pour the sliced onion, pepper, coriander mixture over lentils and serve
